I love nutritional science and understanding how simple foods can heal, balance and improve my health and hormones. Here are a few of the reasons that I love to eat mushrooms.
✅HORMONE BALANCING 😀 😀 😀
Any food that can help lower both excess estrogen and endotoxins gets the big tick from me! Excess estrogen can make fat loss difficult. It has been linked to fat storage on thighs, increased risk of cancer, problematic menstrual issues, cellulite and mood swings.
Mushrooms contain phytochemicals that inhibit aromatase activity…. or the synthesis of estrogen…. which also blocks the conversion of testosterone to estrogen.
“Well-cooked mushrooms contain an effective amount of aromatase inhibitors, can improve digestion and are very nutritious.” Dr. Ray Peat.
✅BOWEL HEALTH.
Well-cooked mushrooms assist the intestines to help transit anything that may not be properly digested. Their fibres absorb toxins and disinfect the bowels in a similar manner as bamboo shoots and raw carrots. This means they are very helpful in treating small intestine bacterial overgrowth (SIBO) and IBS.
“Cooked mushrooms which accelerate peristalsis and speed transit through the bowel, while suppressing bacterial growth, seems like a convenient approach to increasing longevity.” – Dr. Ray Peat
✅NUTRITIOUS.
White mushrooms are extremely nutritious and have similar nutritional strength to egg yolks. They are a good source of selenium, zinc, choline, and vitamin D.
✅PRO-METABOLIC.
Mushrooms contain more sugar than starches and have a 2:1 sugar to starch ratio. They also contain a good amount of iodine that is great for thyroid health.
✅LOW CALORIES.
One cup of mushrooms is only 15 calories. So an incredible array of health benefits for very little calories. Win…. win!
HOW TO COOK THEM
It is important to be aware that mushrooms contain toxic compounds hydrazine and agaritine that is hepatoxic. Cooking them really well removes virtually all of the hydrazine and most of the agaritine. I love to sauté them in either butter or coconut oil with lots of sea salt. I eat them with my eggs and orange juice or alongside my fish at dinner.
